This delicious combination of seasonings mutes the strong flavor of lamb and marries some vibrant flavors for a delicious burger. However, if you are in a hurry, simply brown the meat with the seasonings and serve with a generous side of vegetables.
1 1/2 pounds naturally-raised, ground lamb
1 tsp. cumin
1/4 tsp. cinnamon
1/4 tsp. allspice
1/2 tsp. sea salt
1/4 tsp. black pepper
1/4 cup finely chopped mint leaves
1/4 cup chopped parsley
1 clove garlic
1 cup unsalted shelled pistachios
1/2 cup olive oil
1 tsp. lemon juice
1/4 cup loosely packed mint leaves
Pinch of sea salt
1. Combine the ground lamb with the burger ingredients.
2. Form 4 patties and pan-fry or grill, approximately 4-6 minutes per side.
3. While the burgers are cooking, blend together pesto ingredients in a food processor or blender.
4. Serve burgers with pesto drizzled on top. Serves 4 or more.
