    Picnic days are here! For a change of flavor in portable foods, try the Italian Chicken
    Salad, served on Napa Cabbage leaves for low-glycemic diets. Hummus with roasted
    red peppers is an appetizing treat and can be gluten-free spread on rice crackers
    or vegie slices (you can use the Napa Cabbage for that, too.) Organic Strawberries
    and Whipped Cream make a fresh, natural and yummy dessert for those who like it simple.
    Keep separate until you are ready for dessert. Organic Whipped Cream keeps its shape
    much longer.

    ROASTED-RED-PEPPER HUMMUS
    Soak overnight in purified water: 1 cup organic Garbanzo Beans (alternative: cook
    1 cup organic Garbanzos Beans in purified water with 1/2 teaspoon Celtic Sea Salt
    or Krystal Himalayan Salt for four hours or until very soft).
    Roast until soft either on grill or in oven, then cut into small squares: I whole
    Organic Red Bell Pepper
    Blend well in blender:
    Cooked Garbanzo Beans
    2 Tbsp. organic Tahini (sesame seed butter)
    1/4 cup chopped organic Parsley
    2 Tbsp. organic Lemon Juice
    2 Tbsp. organic Olive Oil
    1 clove crushed organic Garlic
    Blend in chopped Red Bell Pepper, reserving small amount for garnish, if you wish
    For gluten-free diets, spread on organic rice crackers or almond crackers, or better
    yet, slice at an angle organic carrots, zucchini, cucumber, celery and other fun
    veggies with which to dip or spread upon.

    ITALIAN CHICKEN SALAD
    Blend in large bowl:
    1 lb. chopped (in small squares) organic Chicken
    1 cup chopped organic Tomatoes
    1/2 cup organic Kalamata Olives
    2 Tbsp. organic Pesto Sauce
    1 cup Safflower Mayonnaise
    1 cup organic Artichoke Hearts
    Serves 8-10

    STRAWBERRIES AND WHIPPED CREAM SUNDAE
    Wash and cut in half, or slice:
    2 quarts fresh Organic Strawberries
    At picnic site, portion out strawberries and top with whipped cream, then the coulis.
    The whipped cream acts as ice cream because it holds its shape, but ice cream could
    certainly be added underneath it all if you can keep it frozen till dessert time!
    Serves 8-10.

    WHIPPED CREAM
    Whip until firm:
    1 pint organic Whipping Cream
    3 drops organic Stevia Leaf Extract
    I tsp. organic Vanilla Extract

    STRAWBERRY COULIS
    For topping over the whipped cream, Blend in blender:
    1 pint fresh organic Strawberries
    1 cup organic Raisin Juice (from soaking raisins overnight in water just to cover
    them)
    1/2 tsp. organic Stevia Leaf Extract
    1/8 tsp. Celtic Sea Salt or Krystal Himalayan Salt
