Quinoa with Black Beans


A gluten-free, dairy-free, whole food recipe

This is a favorite recipe of my clients. It is so flavorful and satisfying that you’ll forget you’re eating something so good for you! Keep in mind that using organic ingredients will only enhance your flavor and increase the amount of vitamins and minerals in the dish.

1 tsp organic, unrefined olive oil
1 onion, chopped
3 cloves of garlic, peeled & chopped
3/4 cup uncooked quinoa
11/2 cups vegetable broth
1 tsp cumin
1/4 tsp cayenne pepper (less if you don’t like spicy dishes)
Salt and Pepper to taste
1 cup frozen corn
2 (15oz) cans of black beans, drained & rinsed
1/2 cup chopped fresh cilantro

Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and sauté until lightly browned.

Mix quinoa into the saucepan and add vegetable broth. Season with cumin, cayenne pepper, salt and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes. Quinoa should be soft and fluffy when done.

Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro. Makes 8 small servings.
