A Gluten-free, Dairy-free Whole Food Recipe
This summer salad is as fresh as the season. Bursting with flavor and nutrition, it will certainly be a hit at your summer parties.
1 cup dry quinoa (rinsed)
2 cups water
1/3 cup red onion, chopped
2-3 cups spinach, chopped
2 roma tomatoes, chopped
1 avocado, chopped
1/3 cup feta cheese (optional)
Dressing:
3 tablespoons olive oil
Juice of a lemon
Sea salt
Directions
- Boil water, add quinoa, cover with a lid, and reduce to a simmer until all of the water is absorbed. Fluff with a fork and allow to cool thoroughly. You can place the cooked quinoa in the refrigerator to cool.
- Mix together salad ingredients and then add dressing. Mix well.
