Food First: Vegetables Ripe for Skewering

What makes August great is the abundance of vegetables in the garden and still plenty of long summer days left to grill! Of course, there also are plenty of fun, summer activities, so I like to keep meals quick, simple and nutrient dense. This recipe is fun for older kids, as well! Let them skewer their own fun combinations and they will enjoy eating them all the more! Serve alongside your favorite grilled meat or fish.

Rainbow Skewers
Collect your favorite veggies from the garden or local farmer’s market, some of my favorites are:
Zucchini
Yellow summer squash
Onions
Assorted peppers: Red, Yellow, Green and Orange
Cherry Tomatoes
Button Mushrooms/Baby Portabellas
Wash and chop your veggies into 1-inch chunks. Put them all in a large bowl together and pour a marinade mixture over them.

Marinade:
2 T Olive Oil
1 T Balsamic Vinegar
2 cloves chopped garlic
Salt and Pepper to taste

Of course if you have lots of veggies, increase your marinade amounts. There should be enough to finely coat the vegetables. Marinade for at least 15 minutes, or longer for a better flavor.

Place vegetables on skewers in any order you please. Grill to desired doneness (20-30 minutes, turning occasionally). Also great in the broiler.
