Food First: A Satisfying Gluten-free Meal

Want to go gluten-free, but still crave the texture of pasta? Want a satisfying meal that is also dairy free? I’ve got you covered with this very fresh dish that you can make with a few simple ingredients from the Farmer’s Market or from your garden!

This is an easy dish that takes about 20 minutes to make and pairs well with a green salad or fruit. Did I mention that it is also packed with nutrients? Zucchini is loaded with Vitamins A, C and B-complex and is a great source of the minerals such as Iron, Zinc, Manganese and Potassium. It’s one of the easiest veggies to digest and is full of fiber which is great for digestive health and weight loss as well!

Instead of feeling tired after a big pasta meal, try this and see for yourself the energy you will feel!

GARDEN FRESH PASTA

Noodles:
3 or 4 large zucchini
Olive oil (optional)

Sauce:
6 Roma Tomatoes
1 handful fresh basil
1/2 tsp. dried oregano
3 garlic cloves
4 T. Olive Oil

Directions:
1. Using a spiralizer, make noodles from the zucchini. You can use the noodles raw, just as they are, OR you can heat a tablespoon of olive oil in a pan and stir-fry the noodles briefly for about 2 minutes until tender. The noodles are great either way!
2. Place all sauce ingredients in a blender and blend until combined.
3. Toss Noodles and Sauce together and enjoy!
4. Great paired with a green salad or fruit salad.
