Recipe: Apple Bread

A Gluten-free, Dairy-free Whole Food Recipe kitchen

If you follow a gluten-free diet, you know the feeling of longing for a moist piece of bread. This apple bread will make you smile as you bite into the soft texture. Your body does not need any natural sweeteners or flour, so eat sparingly and share with friends and family.

Ingredients
1/2 cup coconut oil, melted
1/3 – 1/2 cup honey, warmed
1 egg
1/4 cup unsweetened applesauce
1 cup brown rice flour
1/2 cup quinoa flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp sea salt
1 tsp ground cinnamon
1 tsp xanthan gum
1/2 cup walnuts, chopped
1/2 cup pitted dates, chopped
1 cup diced apples, skin on
1/4 cup crushed pineapple

Directions
1. Preheat oven to 350 degrees. Lightly grease a 9 x 5 x 3-inch loaf pan.

2. In a large mixing bowl, beat oil and honey until mixture is smooth and well blended. In a small bowl, whisk the egg and add it to the honey mixture. Stir in the applesauce.

3. In another bowl combine brown rice and quinoa flours, baking powder, baking soda, salt, cinnamon, and xanthan gum, and stir. Add the flour mixture to the honey mixture and mix well. Then add the walnuts, dates, apples and pineapple. Spoon the batter into the prepared loaf pan.

4. Bake for 45-50 minutes, or until a toothpick or sharp knife inserted in the middle comes out clean. Cool on a wire rack, then remove from pan. Enjoy!
